The Mission of ProSafeBeef is to enable the beef chain in Europe to thrive and diversify and to deliver innovative, novel and improved fresh beef and beef products that are safe, high quality and consumer driven for national, regional and global markets thus allowing for a more competitive and sustainable industry.  The Vision of ProSafeBeef is to develop through world class research and knowledge transfer a strategically focused beef safety management system, based upon the principles of quantitative risk analysis and new control and intervention strategies that inspire confidence in the beef chain and is consistent with the wider expectations and needs of European consumers. The Strategic Objective of ProSafeBeef is to make it possible to increase the safety of beef and beef products by the science-based development (along the total beef chain) of novel tools and intervention strategies as well as consumer focused innovative beef products thus invigorating the beef sector.

 

Expected Outcomes:

 

·        Quantitative risk assessment models for key microbial pathogens and chemical residues in beef which can be used to manage risk posed  

 

·        Novel biocontrol strategies which can be used to enhance microbial safety of beef

 

·        Innovative beef processing techniques and products which will give greater diversity in beef products with health benefits for consumer

 

·        Industry/ Stakeholders provided with information on consumer views on beef safety and on potential acceptance of new beef process technologies and novel beef products

 

·        Technologies and outputs from ProSafeBeef transferred in industry usable format to stakeholders in beef sector (industry, policy makers)
