National ProSafeBeef Networks

The ProSafeBeef national SME networks are orientated towards topics specific to the requirements of the national industry in question. Each network consists of five to ten SME's who meet between three and six times a year. Each meeting is a combination of engagement and dissemination/learning techniques such as the presentations of technologies, practical workshops, hands on testing of technologies, exchanges of experiences, discussion and feedback, and process evaluation. Each participating company applies the technologies within their own organisation in the intervening periods between meetings. A mediator, the network project leader, has overall responsibility for the management content, economy and performance of the network.
 
The target groups include product development staff, product managers, production managers, operators and marketing department of the food company. The overall objective is to transfer technology and competence and thereby increase innovation and competitiveness in the food sector.

To date 3 networks have been set up in France, Norway and Spain dedicated to technology transfer. A wider network and database of CEO's, meat organisations, representative bodies and branch organisations are continually being added to our stakeholder groups.

France
The central theme of this network is "Carcass contamination" and it is comprised of 8 French companies. Following the actions carried out during the first two years of the project, a new concept for the French network was designed and launched at the end of 2009. The programme consists of a combined approach incorporating meetings and individual actions within companies dedicated to bovine carcasses contamination.

The following plans are in action:
  • 2nd and 3rd March 3rd 2010: workshop on type and origin of contamination
  • 9th and 10th December 2010: Results coming from ProSafeBeef on carcass contamination demonstration
  • 1 technical workshop dedicated to process and technical choice in slaughterhouse to control bovine carcass contamination.
  • 2 potential individual sessions inside companies to evaluate their own situation concerning the contamination risk with action plan associated

 

Norway
The central theme of this network is "Muscle profiling and new techniques" and it is comprised of 6 Norwegian companies.
 
Four workshops were held in 2009 and 2010:
  • 1st workshop, June 3-5 2009, at Paris-Rungis and ADIV, Clermont-Ferrand (France) about muscle profiling
  • 2nd workshop October 20-21 2009 at Prima Jæren, Stavanger about new results from ProSafeBeef on consumer studies, carcass contamination and marinating
  • 3rd workshop at Nofima March 16-17 2010
  • 4th workshop at IRTA and Barcelona in the period of the Alimentaria congress, Barcelona March 2010

Spain

The central theme of this network is “Muscle profiling and cost-saving actions”. The Spanish network is organised by IRTA. Initially the 1st workshop is planned for the 3rd May 2010. The main program will be focused on a demonstration muscle profiling (with ADIV collaboration) during the morning and on cooking control of beef meat using a device proposed by the company POINTJUST. IRTA will also offer to serve the participating companies with information on special topics, or make a real demonstration at their site.
