Immobilisation of bacteria on hides

The hide is a key source of microbial contamination of beef carcasses. Microbial immobilization treatment of hides reduces bacterial transfer during dehiding and improves microbial status of carcasses. This treatment is a preventative measure to control one of the major carcass contamination sources. The microbial immobilisation hide treatment produced more promising results than hide decontamination treatments.
